This White salsify is a late variety which produces long roots with white, tasty flesh on the inside. The plant has attractive blue flowers, rather like a very small Iris.
Peel and treat like a root vegetables such as carrots.
Perfect to add to casseroles and winter stews.
Very popular in Northern France and Italy during the winter months.
